Butter Turkey Curry

Ingredients

  • 2 tablespoons cooking oil
  • 2 yellow onions, roughly chopped
  • 3 tablespoons chopped ginger
  • 6 cloves garlic, crushed
  • 28 ounce can of crushed or diced tomatoes
  • 1 lb cooked turkey, shredded
  • ¼ cup cream, yogurt, or coconut milk
  • 2 tablespoons almond butter
  • 2-4 tablespoons coconut sugar
  • Sea salt, to taste

The Spices

  • tablespoon garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • ¼ to 1 teaspoon chili powder, depending on how spicy you like your curry
  • seeds from 4 cardamom pods

Armed with some leftover turkey, a few pantry staples, and about 30 minutes, you can easily make this turkey curry.

  1. Cook the onion until it is well browned.
  2. Add some garlic, ginger, and spices then some tomatoes and water.
  3. Simmer simmer simmer then blend.
  4. Make it creamy with some almond butter and coconut milk or yogurt and sweeten the sauce just a touch.
  5. Stir your leftover turkey into the sauce then dig in!
